BOXTY PANCAKES

1 lb. potatoes peeled and grated
6 oz. plain flour.
3/4 teaspoon salt.
1/2 teaspoon baking powder.
1 egg, beaten.
4 fl. oz.milk.

Peel and grate the potatoes. Add the egg and enough milk to make a thick batter. Drop dessertspoonsfuls of batter into a hot greased frying pan. Cook either side for 3-4 minutes or until brown. Serve hot with butter.
