Wicklow Pancake

4eggs
2 cups white breadcrumbs
1 pint milk
1 oz.butter
chopped scallions, parsley, thyme
Salt and Pepper

Beat eggs, add milk, breadcrumbs, scallions, and herbs. Season. Melt butter and pour over mixture. Allow to set over a low heat, and when firm, turn over and cook on the other side.
