Champ

A good warm economical Irish dish for a cold winter's night.

2 oz. melted butter
1/4 pint milk
2 oz.chopped shallots
1 lb. cooked mashed potatoes
Salt and pepper
4 oz. butter
> Place butter, milk and shallots into saucepan. Boil and simmer for a couple of minutes.Add potatoes and combine. Simmer further 5 minutes over low heat. Season.Place on hot serving dish. Drizzle further melted butter over mixture.
