Easter Pancakes

12 Eggs, beaten
2# Italian Sausage 
1# Mozzarella Cheese chopped up in large pieces
2# Ricotta Cheese 		 6 cups flour 
1 tsp. salt 
Fennel
Water for desired consistency

Mix all ingredients.  Add water for desired consistency. Fry in small skillet with a small amount of oil.

 This is the way my Aunt Eva makes them (Peter's mom).  I had a hard time getting my husbands to eat this pancake with out syrup. Ugh!!!  Diane
