The following are various informal Fritatta recipes.

Frittata

Mix flour and water to a pancake batter consistancy.  Mix in shredded mozzarella cheese.  Pour into frying pan of hot oil.  As batter cooks, loosen batter from bottom of pan.  When crispy at bottom, turn down heat and turn fritatta carefully.  Remove from oil when cheese at bottom browns.  Sprinkle with salt.

My Mother's frittatas are a little different. She uses eggs, no flour. She mixes in browned sausage and Mozzarella cheese and parsley and ricotta. She cooks it just the way you describe in hot oil but turns it. The Italian cookbook from Kenosha has the recipe with flour but eggs also as well as the one my Mother makes. One of my aunt's uses a little supersotte (?sp) instead of sausage. It's an Easter tradition. Mom often served asparagas with them.
