Ravioli (makes about 72)

Dough: 

8 eggs  1/3 cup water flour

Filling: 

2 # ground round
1/2 # ground pork
1 # ricotta
1 pkg chopped spinach, thawed and pressed dry
1 handfull romano cheese
parsley
4 eggs
4 oz dry bread crumbs
seasoning to taste

Of course there are no specific directions! You can mix the filling the  night before. Make the dough and roll out (with pasta machine) into long  wide strips. Drop about 1 Tablespoon of filling in a row along 1 side of  dough, fold over, crimp and cut into individual ravs. We usually freeze them  on cookie sheets so they can be made ahead.

Once frozen, put in plastic bags  in freezer. Can be cooked directly from freezer into LARGE pot of boiling salted water. Serve with sauce and lots of cheese.
