1 ½ cup oil 
8 to 9 cups flour
1 cup Muscatel wine 
2 eggs
½ cup water Oil for deep-fat frying
¾ cup shortening 
Honey
 

Boil oil, wine, shortening and water together. Set aside. Add eggs to flour, then work in cooled liquid mixture with spoon. Add more flour if necessary. Knead a little until a formed ball. Shape by rolling piece of dough into a ½ inch in diameter and 1 inch pieces. Fry 10-15 minutes.

I make them a little smaller so they are not as greasy.  These have 2 eggs in them, which is a slight variation from the original - less oily and greasy.

"Turdiddi and Scalidde are a main dessert staple in our home over the holidays. My grandmother showed me how to make them and now I am showing my children. Anyone I met from the southern part of Italy, around Cosenza, seemed to be familiar with these 'honey" cookies."
