GEN-NYS-L: Probate Records?

Can anyone give me a concise explanation of exactly what probate records
are, what info they might give me, and where I would go to search them? I
understand they have to do with resolution of an individual's estate upon
his/her death, but am unclear as to specifically what they consist of.

I would be especially interested in responses relative to the Syracuse, NY
area, as that is where my VERTIGAN ancestors lived, died, and are buried.
It's also where I grew up, and I am very familiar with the area.
