OLD-FASHIONED CHOCOLATE CAKE 3squares Hershey's Baking Chocolate 5 tablespoonfuls hot water 1/2 cupful butter 1 & 1/2 cupfuls granulated sugar 4 eggs, separated 1 & 3/4 cupfuls sifted cake flour 2 teaspoonfuls baking powder 1/2 teaspoonful salt 1/2 cupful milk 1 teaspoonful vanilla Melt the baking chocoalte, cut into small pieces, with the hot water in top of double boiler over simmering water. Cream the butter and sugar together well; add the egg yolks, well beaten, and whip thoroughly. Then add the melted chocolate mixture, slightly cooled, the flour sifted with the baking powder and salt, and the milk. Fold in the stiffly whipped egg whites and vanilla. Pour into a well-greased and floured pan. (13 X 9 X 2-inch) Bake in a moderate oven (350 degrees) 40 to 45 minutes or until done. (Mother used two 8 inch baking pans) Chocolate Butter Icing 3 squares Hershey's Baking Chocolate 6 tablespoonfuls butter 2 egg yolks 1 teaspoonful vanilla 1 cupful 4X sugar (confectioners') Melt the baking chocolate in top of double boiler over the simmering water. Cream the butter, egg yolks and vanilla, and slowly add melted baking chocolate. Add sugar to make of proper consistency for spreading. Yield: 1 & 1/4 cupfuls icing or enough for an 8 or 9 inch layer cake. Just thinking of this cake brings back many fond memories. A few years ago at a yard sale, I found a book published in 1971. HERSHEY'S 1934 Cookbook, Revised and expanded with chocolate recipes brought up to date for use in today's kitchen. Since this was the year I was born, it caught my eye.
