Bob's Pepper Cabbage 1 med. Green Bell Pepper Chopped very fine 3 stalks Celery Chopped very fine 1 med. Head cabbage Chopped very fine 3 cloves Garlic Chopped very fine 2 teaspoons Celery Seeds 1 cup White Distilled Vinegar 1-1/2 cups Sugar Mix chopped veggies and set aside Mix sugar and vinegar until sugar is completely dissolved. Pour over cabbage mixture and chill for several hours before using. Add salt to taste. NOTE: I chop the vegetables separately in a food processor, using pulse action. If you try to run the processor too long it will turn the veggies to mush. I also mix the sugar and vinegar in the blender to completely dissolved the sugar. This slaw will keep for many weeks in the frig. In fact it gets better with age. This is as close as I can get to the way my Mother made it when I was a boy. It was good then, and is still good.
