Pot roast on top of the stove 4 -5 lb. chuck roast( we use a cut of meat with less fat due to restricted diets) 2 medium onions 4 -5 potatoes peeled and cut into quarters 6 -7 carrots. Skinned cut into pieces and par boiled coat meat with a mixture of flour, salt ,pepper, parsley, dill, and basil ( you should use which ever spices your family likes). Have the kettle boiling. After the meat has been dredged through the flour, put it in a heavy pot that has been heated(just a little oil). Brown the meat on all sides. Then add the carrots, and about 1/2 cup of the Boiling water. Let it cook a few minutes. Add the onions , a little more boiling water. Last add the carrots , more boiling water. I also add a package of dry onion soup. Put a lid on it and turn the heat down to low. Cook for several hours. you can serve with mashed potatoes instead of putting potatoes in the pot. Keep the water hot in case you need to add more.
