Potato Pancakes Grate about 4 cups raw potato (Idahos are the best) Grate in a little onion Add 2 beaten eggs Salt and pepper to taste Peel potato and put in cold water; grate and press down in cup so water will drain off. Work quickly so potato will not darken. Add about 1 tbsp. flour Drop by spoonful into hot grease and fry until they are lacy and crisp along the outside edges.
