GRANNY SCHACH'S SHOOFLY PIE (Per Granny: with lots of goo) CRUMB MIXTURE: 1 cup flour 2/3 cup brown sugar 1 rounded tablespoon shortening (white Crisco) Mix like pie dough to make a crumb like mixture. (I use a pastry blender, which works great). Set aside 1/2-cup crumbs. FILLING: 1 egg, slightly beaten 1 cup molasses (dark Karo works great) 3/4 cup cold water 1 teaspoon baking soda 1/4 cup hot water Put baking soda into the hot water; stir until dissolved. Combine slightly beaten egg, molasses, and cold water. Add the baking soda mixture. Add this liquid mixture to the crumb mixture, stir with a spoon (do not use a mixer), just until blended. Do not overmix. Pour into a 9 inch unbaked pie shell. Sprinkle the half-cup of crumbs over the top. Bake at 375 degrees for 35 minutes. This recipe makes a wonderful shoofly pie.
