Anna Krpec's Walachian Sauerkraut Soup (Valaská Kyselica)
2 quarts water 2 quarts sauerkraut 4 medium potatoes, peeled and diced 1/2 tsp. caraway seeds 1/2 pound Czech sausage, diced 1/2 cup onion, diced 1 bay leaf 6 whole allspice berries 2 beef boullion cubes 1 teaspoon marjoram 1 teaspoon chopped parsley 1 tablespoon minced garlic 1 cup milk 1/2 cup half–and–half salt and pepper to taste - Put water and sauerkraut in large soup pot and cook for 30 minutes.
- Sauté sausage and onion until onion is soft. Add potatoes to sauerkraut. Add sausage and onion, bay leaf and allspice. Add more water if necessary to cover all.
- Cook for 45 min. Add remaining ingredients and simmer for 30 min. longer.
- Milk and half–and–half can be adjusted to taste.
