Oatmeal Scotchies
1 cup flour
1 tsp baking powder
½ tsp baking soda
½ tsp. salt
½ cup butter or margarine, softened
3/4 c. firmly packed brown sugar
1 egg
1½ tsp water
3/4 cup quick oats (uncooked)
1 cup Nestle Butterscotch Chips
¼ tsp orange extract
Directions:
Preheat oven to 375.
In small bowl, combine 1st 4 ingredients and set aside.
In large bowl, combine butter, sugar, egg and water. Beat this mixture until creamy. Gradually add in flour mixture.
Stir in remaining ingredients. Drop by slightly rounded tablespoonfuls onto cookie sheet which has been lightly greased.
Bake about 10 minutes. Cool the baked cookies on a wire rack. May be stored in refrigerator.
This recipe makes a small batch of cookies – about 2 ½ dozen to 3 dozen. Recipe can be doubled, if desired.
