This recipe is from my great grandmother's cookbook (handed down to her granddaughter, Phyllis Dorothy Wilson Purdy, who has handed it to me. My great grandmother is Jennie Mae Halstead Colby.
Sauce: 1 tbsp butter 1 1/2 level tbsp flour 1 cup milk Liquid from salmon 1/2 tsp salt pepper
Melt butter and mix thoroughly with flour, then add milk. Let come to a boil and thicken. Then add salmon liquid and seasonings.
Flake your salmon in a bowl, pour over it the sauce, let stand a few minutes and serve.
Good with boiled potatoes.
