This cake was made every year at Christmas when the family gathered. I cannot think of Christmas' past without remembering this cake.
1/2 c shortening plus 1/4 pound butter or margarine (can use all of one or the other) 2 c sugar 5 eggs, separated 1 tsp vanilla 2 c flour 1 tsp soda 1/2 tsp salt 1 c buttermilk 2 c shredded coconut 1 c chopped nuts Cream Cheese Icing
Cream shortening, butter and sugar; add egg yolkd one at a time. Combine dry ingredients and alternate with buttermilk when mixing with creamed mixture. Add coconut and nuts; fold in stiffly beaten egg whites. Pour into 3 large greased and floured layer pans. Bake 25 minutes at 350 degrees.
1/4 lb butter or margarine 1 lb powdered sugar 1 tsp vanilla 1 cup chopped nuts 1 8-ounce package of cream cheese, softened.
Mix thoroughly all ingredients and frost between layers and on top. You may sprinkle with coconut if desired.
