This recipe is from my great grandmother's cookbook (handed down to her granddaughter, Phyllis Dorothy Wilson Purdy, who has handed it to me. My great grandmother is Jennie Mae Halstead Colby.
Mix 1 egg slightly beaten 1/3 cup sugar 1 1/2 cups milk 3/4 tsp vanilla 1/4 tsp salt add 2 1/2 cups cooked rice 3/4 cup seedless raisins cut in half Pour into greased baking dish 8x8x2 Bake 1 hr or until firm Dates or currants may be used in place of raisins. 1/2 tsp grated lemon rind instead of vanilla
